Sweet Potato Bread

I finally got around to baking sweet potato bread. The Food Network recipe I used is here. Right at the start I hit a snag: the recipe calls for mashed potatoes -- but does that mean raw mashed potatoes or boiled (or even baked) mashed potatoes? I decided to boil them (after peeling them) for about seven minutes, and they mashed up quite well. When it came out of the oven it looked like normal bread. And the taste? It is quite good -- I put an extra tablespoon of cinnamon in it and the taste is close to pumpkin bread. The pecans give it a good texture, too. There were only a couple of spots where the mashed potato did not bake all the way through, but overall the bread's consistency is pretty good. A very nice bread, not too sweet, and very filling.
